Lady Ray's Celebrates Four Years of Growth Ahead of Memorial Day Weekend as Expansion and Founders Club Plans Move Forward

DESTIN, FL. - As Memorial Day weekend approaches, Lady Ray's is preparing to celebrate a milestone that represents far more than another year in business. The Destin-based café, tea house, pastry bar, and growing lifestyle brand is marking its fourth anniversary while simultaneously entering what ownership describes as its "next chapter," with renovations, new experiences, and expanded offerings already on the horizon.

What began as a concept centered around memorable food experiences has evolved into a multifaceted collection of businesses and brands serving customers from across the United States. Today, Lady Ray's has become known for much more than coffee and pastries, offering handcrafted sandwiches, custom cake creations, tea experiences, specialty spices, hot sauces, pepper jellies, locally sourced honey products, and a growing line of branded culinary goods.

As the anniversary approaches, leadership says the occasion is less about looking backward and more about recognizing the momentum that has been created over the last four years.

Tim Vondell, Owner of Lady Ray's Culinary Delights, said the anniversary represents gratitude mixed with responsibility for what comes next.

"Four years in business is something we're proud of, but I don't think anyone here sees this as arriving somewhere. We see it as confirmation that people believe in what we're building. The support has come from customers who live down the road and from customers who visit us from all over the country and make Lady Ray's part of their experience when they're here. That support carries weight with us."

"Gratitude gets used a lot in business announcements, but for us it simply means understanding that none of this happens by accident. Every tea reservation, every cake order, every family breakfast, every customer who takes a jar of honey or a bottle of hot sauce home with them - those things matter."
While many customers know Lady Ray's as a destination for breakfast, lunch, pastries, and tea service, ownership says there has long been a misconception that the business exists only as a café storefront.

In reality, Lady Ray's operates as an umbrella brand made up of several interconnected businesses and service lines.

Its portfolio includes:
• Bake My Day by Lady Ray - custom cakes and specialty baked creations
• Plan My Day by Lady Ray - day-of coordination and event services
• Elevated Exchange - the company's distribution and white-label product arm
• Shores Salon - a neighboring beauty and salon concept operating alongside the Lady Ray's family of businesses.

Leadership says these businesses have been intentionally structured to create a broader ecosystem rather than a single revenue stream.

Founder and General Manager Rachel Ploegmakers said the vision has always been larger than the walls customers currently walk into.

"People often walk in and think they're stepping into a café, and they absolutely are, but behind that experience is an entire network of ideas, products, and services all working together."

"We wanted Lady Ray's to feel like a place where creativity lives. Some people know us for pastries, some for tea parties, some for cakes, and others for our products. That's exciting because it means different people are connecting with different parts of the brand."

Ploegmakers also noted that growth has created new opportunities-and new challenges.

"We've thoughtfully utilized just about every inch of our current space. During our busiest times, we feel that capacity quickly. That's actually become one of the strongest indicators that it's time for the next phase."
That next phase is already beginning.

The company confirmed that renovations are expected to occur as part of a larger expansion effort designed to increase flexibility within the business. Plans include additional guest accommodations and dedicated spaces intended to support private events, tea experiences, and customer overflow during peak café hours.

Leadership also announced the planned introduction of the Founders Club, a membership-based program designed for customers and supporters interested in helping the Lady Ray's brand continue to grow without requiring a significant financial commitment.

Early concepts for the Founders Club include benefits such as priority access, preferred booking opportunities, exclusive experiences, invitations to private events, discounts across participating Lady Ray's brands, and other members-only offerings.

Vondell said the goal is to create something that allows customers to participate in growth in a meaningful but approachable way.

"We wanted a way for people who genuinely love the brand to be part of where we're headed. Not everyone wants to make a major investment into a business, and they shouldn't have to. This creates an opportunity to help build something while also receiving meaningful value in return."

"We've got big things coming, and we're very intentional about where we're going. The next four years are going to look very different from the first four."

As Memorial Day weekend approaches, Lady Ray's leadership says the celebration itself will remain simple: acknowledging the milestone, serving customers, and continuing to build.

Ploegmakers offered one final reflection on the anniversary.
"We're incredibly proud of four years, but we're even more excited about year five."
